Prawns are extremely popular thanks to its delicious flavor. Moreover, prawns can be savoured in more ways than one. It can be boiled, steamed, sautéed or baked, fried or grilled stewed. It can even be used in a curry, which makes it a versatile ingredient that can find its way into any recipe.
2 fresh green chillies de-seeded and finely chopped
100gms grated cheese
Juice of 1 lemon
A few drops of Tabasco
2 tbl sp olive oil
2 small onions, peeled and finely sliced
6 cloves garlic, peeled and finely chopped
200 ml cream
Salt and pepper to taste
Wash the prawns thoroughly with cold water. After that, peel off the shells and then, using the point of a sharp knife, make a tiny slit all along the back of each prawn and remove any black thread.
Then place the prawns in a bowl, sprinkle in lime juice and Tabasco, toss them around and leave them to marinate for about 15 minutes. At this point turn the grill on to its highest setting.
Meanwhile, heat the oil in a frying pan and lightly cook the onions for about three minutes before adding garlic and chillies. Continue to cook these for another 2-3 minutes.
Next, divide the onion mixture between the 4 dishes, then drain the prawns and divide these equally, as well.
Season the cream very well with salt, pepper and mix in the cheese. Then spoon this mixture over the prawns. Add a little grated cheese over the cream and grill for about 5-6 minutes, until the prawns are cooked and the cheese is golden brown and bubbly.
