Chicken lovely legs cooked in spiced coconut curry in this special recipe. Easy to make and very tasty.
8 chicken lovely legs, skinless
2 tbs oil
1 tsp mustard seeds, whole
8-10 curry leaves
1 med onion, chopped
2 inch cinnamon stick
3-4 cloves garlic, minced
1 tbsp ginger, chopped
3 tbsp curry powder
1 tsp chilli powder
1/2 tsp black peppercorns
1 can unsweetened coconut milk
1 tsp salt
Heat oil in saucepan, add mustard seed and allow to sizzle.
Add cinnamon stick and the onion and cook until golden brown.
Add garlic and ginger, continue cooking 2-3 mins more.
Add chicken pieces, peppercorns and the curry powder and cook until well coated and brown, add small of water if necessary to keep the spices from burning.
Add the coconut milk with 1/2 cup of water and bring to a boil, then reduce heat, cover and
cook for 45-50 mins until the meat is tender.
Serve: with boiled Basmati rice or Roti Chanai.
Tip: Try Chicken Drumsticks or Thighs pieces on the bone. Variation: Add diced Potatoes if desired.
Garnish: with Curry Leaves
